This is what I call “Patricia’s Chia Pudding”. It makes a wonderful breakfast or an anytime snack full of healthy fats and high in protein.

Ingredients

  • 3 tablespoons chia seeds
  • 1 teaspoon maple syrup
  • 1 teaspoon vanilla extract
  • 3 tablespoons peanut powder
  • 1 cup (240ml) unsweetened coconut milk
  • 1/2 cup (75g) frozen raspberries

Directions

In a jar with a lid, add chia seeds, maple syrup, vanilla extract, peanut powder and coconut milk. Secure lid on jar and shake until fully mixed. Refrigerate for four hours or overnight. Top with raspberries.S

What do I need?

  • 3 tablespoons chia seeds
  • 1 teaspoon maple syrup
  • 1 teaspoon vanilla extract
  • 1 cup unsweetened coconut/cashew or almond milk
  • 1/2 cup fruit of your choice

Putting it all together

Put all of the ingredients in a jar or other container. Make sure the lid is put on tightly and shake carefully until fully mixed. Put in the fridge overnight and in the morning you will have a perfect breakfast pudding. Top with your favourite fruit, nuts, granola or all three.

This should be enough for one person. Double up the ingredients if you’d like to share.
